Meal Prep Tips

  • Chop veggies early and keep them in a bag in the fridge
  • Use chicken thighs if you want meat that stays soft even after reheating
  • Make extra broth and keep it in a jar for adding more later
  • Keep noodles or rice separate if you plan to add them, so they do not get mushy
  • Write the date on your containers because I always forget and then panic

Storage Tips

  • Store the soup in the fridge for about three to four days in a tight container
  • Freeze extra soup in small portions so it defrosts faster on busy nights
  • Leave a little space at the top of the container if freezing since the liquid grows
  • Warm it slow on the stove so the veggies stay soft and not sad
  • Add a splash of broth when reheating because the soup gets thicker in the fridge
