Ingredients
  

  • 1 lb ground beef
  • 3 cups potatoes diced
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 cup shredded cheese optional
  • 2 tbsp parsley optional

Method
 

  1. Turn on the Instant Pot and select sauté mode. Add olive oil and heat for 1 minute.
  2. Add ground beef and cook for 4 to 5 minutes, breaking it apart until browned. Drain excess grease if needed.
  3. Add chopped onion and minced garlic. Cook for 2 to 3 minutes until softened and fragrant.
  4. Add diced potatoes along with salt, pepper, paprika, and oregano. Stir well to combine.
  5. Pour in beef broth and scrape the bottom of the pot to remove any browned bits.
  6. Close the lid and set the valve to sealing. Cook on high pressure for 8 minutes.
  7. Allow a quick pressure release once cooking is complete. Open the lid carefully.
  8. Stir gently. Add cheese if desired and allow it to melt before serving. Garnish with parsley.

Notes

  • Cut potatoes into evenly sized pieces to ensure they cook at the same rate
  • Use lean ground beef to reduce excess grease in the dish
  • Always scrape the bottom of the pot after browning to prevent a burn notice
  • Do not overcook, as potatoes can become too soft and mushy
  • For extra flavor, use freshly minced garlic and onion instead of powders
  • Cheese is optional but adds a creamy and rich finish when stirred in at the end
