Ingredients
  

  • 1 tbsp extra-virgin olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 1/2 lb ground beef
  • 2 tbsp tomato paste
  • 2 cups low-sodium beef broth
  • 1 14.5 oz can fire-roasted diced tomatoes
  • 1 15 oz can kidney beans, rinsed and drained
  • 1 15 oz can black beans, rinsed and drained
  • 1 tbsp chili powder
  • 2 tsp chili powder
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp smoked paprika
  • salt to taste
  • freshly ground black pepper to taste
For serving
  • shredded cheddar cheese
  • sour cream
  • tortilla chips
  • sliced green onions

Method
 

  1. Turn the Instant Pot to sauté mode and heat the olive oil.
  2. Add onion and cook until soft. Stir in garlic and cook briefly.
  3. Add ground beef and cook until browned.
  4. Stir in tomato paste and cook for one minute.
  5. Add beef broth, diced tomatoes, beans, and spices. Stir well.
  6. Close the lid and cook on High Pressure for 15 minutes.
  7. Allow natural pressure release for 10 minutes.
  8. Stir the chili and serve with toppings.
