Method
- Heat olive oil in a pan and sear salmon on both sides until golden and cooked through. Remove and set aside.
- Melt butter in the same pan and sauté garlic until fragrant.
- Add orzo and stir to coat in butter. Toast briefly.
- Pour in chicken broth and simmer until orzo is tender.
- Add milk or cream and stir until the sauce becomes creamy.
- Mix in parmesan cheese and lemon juice. Season with salt and pepper.
- Add salmon back into the pan and gently mix.
- Finish with parsley and serve warm.
Notes
- Add more broth if needed for a looser texture
- Fresh salmon gives best flavor and texture
- Stir often to prevent sticking
- Do not overcook the orzo
