Ingredients
  

  • 2 cups cooked rice
  • 2 cups chicken breast cooked and shredded
  • 1/2 cup buffalo sauce
  • 1 tablespoon butter
  • 1/2 cup lettuce shredded
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup cheese shredded
  • 2 tablespoons ranch or blue cheese dressing

Method
 

  1. Cook rice until soft and fluffy. Keep warm.
  2. Cook chicken until fully done, then shred or chop.
  3. Melt butter in a pan and mix with buffalo sauce.
  4. Add chicken and toss until fully coated.
  5. Place warm rice into serving bowls.
  6. Add buffalo chicken over rice.
  7. Top with lettuce, tomatoes, and cheese.
  8. Drizzle with ranch or blue cheese dressing.
  9. Serve immediately while warm.
