Ingredients
  

  • 2 cups rice cooked
  • 2 chicken breasts cut into bite-size pieces
  • 2 tbsp oil
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 2 tsp garlic minced
  • 1 tsp ginger grated
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 cup broccoli florets
  • 1/2 cup carrots sliced

Method
 

  1. Cook rice according to package instructions, fluff, and keep warm
  2. In a bowl, mix soy sauce, honey, brown sugar, vinegar, garlic, and ginger until combined
  3. Cut chicken into even bite-size pieces and pat dry
  4. Heat oil in a pan over medium heat and add chicken in a single layer
  5. Cook chicken without moving for a few minutes, then stir and cook until fully done
  6. Add broccoli and carrots, stir gently, and cook until slightly tender
  7. Pour sauce into the pan and mix to coat chicken and vegetables evenly
  8. In a small bowl, mix cornstarch and water until smooth, then add to the pan
  9. Stir continuously until the sauce thickens and becomes glossy
  10. Reduce heat and let everything simmer for a few minutes
  11. Serve over warm rice and add toppings if desired

  • Adjust sweetness or salt based on taste
