Ingredients
  

  • 2 chicken breasts cubed
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • Salt
  • Pepper
  • 2 cups cooked rice
  • 2 cups corn
  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1/2 cup cheese
  • 1 tbsp lime juice
  • 1/2 tsp chili powder
  • Cilantro
  • Lime wedges

Method
 

  1. Cook the rice according to package instructions until soft and fluffy. Keep warm.
  2. In a bowl, combine chicken with olive oil, chili powder, garlic powder, paprika, cumin, salt, and pepper. Mix well so all pieces are coated evenly.
  3. Heat a pan over medium heat. Add the chicken and cook for 6 to 8 minutes. Stir occasionally and cook until the chicken is fully done and lightly golden on the outside. Remove from heat.
  4. In a separate bowl, prepare the street corn mixture. Add corn, mayo, sour cream, cheese, lime juice, chili powder, and salt. Mix until creamy and well combined. Taste and adjust seasoning if needed.
  5. To assemble, add a layer of warm rice into each bowl. Top with cooked chicken and then add the street corn mixture.
  6. Finish by adding chopped cilantro, extra cheese, and a squeeze of lime juice on top. Serve immediately.
