Ingredients
  

  • 2 cup cooked rice
  • 1 cup chickpeas drained and rinsed
  • 1 cup cucumber chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup olives sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup hummus

Method
 

  1. ook rice until fluffy and let it cool slightly.
  2. Chop cucumber, tomatoes, and onion into small pieces.
  3. Prepare chickpeas or cook protein of choice.
  4. Mix olive oil, lemon juice, oregano, salt, and pepper to make dressing.
  5. Add rice to a bowl and layer vegetables, chickpeas, olives, and feta.
  6. Drizzle dressing and serve with hummus.

Notes

  • For extra flavor, use freshly squeezed lemon juice instead of bottled juice.
  • Brown rice or quinoa can be used instead of white rice for a heartier texture.
  • Store ingredients separately if making ahead for meal prep to keep vegetables fresh and crisp.
