Ingredients
  

  • 1 pound chicken breasts boneless
  • 1 onion chopped
  • 3 garlic cloves minced
  • 1 bell pepper chopped
  • 1 can black beans drained
  • 1 can corn drained
  • 1 can tomatoes diced with green chiles
  • 4 cups chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • pepper to taste
  • 1 lime Juice
  • Corn tortillas
  • tortilla chips
Optional Toppings:
  • cheese Shredded

Method
 

  1. Place chicken, onion, garlic, bell pepper, black beans, corn, diced tomatoes, chicken broth, and spices into the Instant Pot. Give it a small stir to mix everything.
  2. Close the lid and set the Instant Pot to Pressure Cook for 12 minutes. Walk away, do a little dance, or check on the kids while it cooks.
  3. Once done, carefully do a quick release of pressure. Open the lid and shred the chicken with two forks right in the pot. Mix it back into the soup.
  4. Squeeze fresh lime juice into the soup and stir. This brightens up all the flavors.
  5. Ladle soup into bowls and add tortilla chips or strips. Top with cheese, avocado, cilantro, and sour cream. Enjoy the cozy messiness!
