Instant Pot Beef Tacos

Ingredients
  

  • 2 lb beef chuck roast
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 1 tbsp lime juice
Toppings
  • 8 to 10 tortillas
  • shredded lettuce
  • diced tomatoes
  • shredded cheese
  • chopped cilantro
  • sour cream

Method
 

  1. Season the beef with salt, pepper, chili powder, cumin, paprika, garlic powder, and onion powder.
  2. Turn Instant Pot to sauté mode and heat olive oil.
  3. Sear the beef on all sides for three to four minutes.
  4. Remove beef and add broth, tomato paste, and lime juice. Scrape the pot bottom.
  5. Return beef to the pot and close the lid.
  6. Cook on high pressure for 60 minutes.
  7. Allow natural pressure release for 25 minutes.
  8. Remove beef and shred using two forks.
  9. Return shredded beef to the sauce and mix.
  10. Serve in tortillas with toppings.
