Ingredients
  

  • 2 lb beef chuck roast cubed
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 4 carrots sliced
  • 3 potatoes cubed
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 bay leaf
  • 2 tbsp cornstarch
  • 2 tbsp water

Method
 

  1. Season beef cubes with salt and pepper.
  2. Sauté beef in olive oil until browned. Remove from pot.
  3. Cook onion until soft, then add garlic.
  4. Pour in beef broth and scrape the bottom of the pot.
  5. Add beef, vegetables, tomato paste, Worcestershire sauce, and seasonings.
  6. Pressure cook on high for 35 minutes.
  7. Let pressure release naturally for 20 minutes.
  8. Stir in cornstarch slurry and simmer until thick.
  9. Add peas and serve warm.
