Ingredients
  

  • 2 lb beef chuck roast
  • 1 tbsp oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp paprika
  • 2 cloves garlic minced
  • 1/4 cup lime juice
  • 1/4 cup beef broth
  • 1 tbsp tomato paste
  • 1-2 chipotle peppers in adobo sauce

Method
 

  1. Cut beef into chunks and season with salt and pepper
  2. Turn on sauté mode and heat oil
  3. Sear beef on all sides until browned
  4. Add garlic, spices, tomato paste, chipotle, lime juice, and broth
  5. Close lid and cook on high pressure for 50 to 60 minutes
  6. Let pressure release naturally
  7. Shred beef using forks
  8. Mix shredded beef with sauce and serve warm

  • Adjust spice level by changing chipotle amount
  • Best served fresh but also great for leftovers
