Ingredients
  

  • 2 cups rice cooked
  • 2 chicken breasts cut into bite-sized pieces
  • 2 tbsp oil
  • 4 cloves garlic minced
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 1 tbsp vinegar
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Cook the rice according to package instructions until soft and fluffy. Set aside and keep warm.
  2. Cut chicken into small, even pieces. Season lightly with salt and pepper.
  3. Heat oil in a large pan over medium heat. Add chicken in a single layer and cook until golden on the outside and fully cooked inside. Stir occasionally for even cooking.
  4. Add minced garlic to the pan and cook for about 1 minute until fragrant. Stir to combine with the chicken.
  5. In a bowl, mix honey, soy sauce, and vinegar until smooth. Pour this mixture into the pan and stir well to coat the chicken.
  6. In a small bowl, mix cornstarch with water until smooth. Slowly add this to the pan while stirring continuously.
  7. Cook the sauce until it thickens and becomes glossy. Make sure the chicken is fully coated and the sauce is not too runny.
  8. If using vegetables, add them at this stage and cook for a few minutes until tender.
  9. Serve the chicken over warm rice. Spoon extra sauce over the top for more flavor.
  10. Garnish with green onions and sesame seeds if desired.

  • Use chicken thighs for a juicier result
