Ingredients
  

  • 2 cups rice cooked
  • 2 chicken breasts cubed
  • 2 tbsp olive oil
  • 3 tbsp honey
  • 2 tbsp chipotle sauce
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup corn
  • 1 cup black beans drained and rinsed
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup cilantro chopped

Method
 

  1. Cut the chicken into small, even cubes and pat dry.
  2. Heat olive oil in a pan over medium heat. Add chicken and cook for 6 to 8 minutes until fully cooked and lightly browned.
  3. In a bowl, mix honey, chipotle sauce, soy sauce, garlic powder, paprika, salt, and pepper until smooth.
  4. Pour the sauce over the cooked chicken. Stir well and cook for 2 to 3 minutes until the sauce thickens and coats the chicken evenly.
  5. Warm the rice and prepare toppings by draining beans, cutting tomatoes, and chopping cilantro.
  6. Add rice to bowls, top with chicken, then add corn, beans, and tomatoes.
  7. Sprinkle cilantro on top and serve warm.
