Ground Beef Rice Bowl

This easy ground beef rice bowl recipe is a quick and flavorful meal made with seasoned beef, soft rice, and a simple savory sauce. Perfect for busy weeknights and meal prep.

Ingredients
  

  • 1 lb ground beef
  • 2 cups cooked rice
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp garlic minced
  • 1 tsp ginger grated
  • 1 tbsp oil
  • 1/2 cup onion chopped
  • 1/2 cup carrots finely chopped
  • 2 tbsp green onions sliced
  • Salt to taste
  • Pepper to taste

Method
 

  1. Cook the rice according to package instructions. Once done, fluff the rice with a fork and keep it warm.
  2. Heat oil in a large skillet over medium heat. Add the ground beef and let it cook undisturbed for about 1 minute to develop browning. Then break it apart into small crumbles and continue cooking for 5 to 7 minutes until fully browned.
  3. Add the chopped onion and carrots to the pan. Stir to combine and cook for 3 to 4 minutes until the onions become soft and the carrots start to tenderize.
  4. Stir in the minced garlic and grated ginger. Cook for about 1 minute, stirring constantly, until fragrant.
  5. Pour in the soy sauce and brown sugar. Mix well so the beef is evenly coated. Let the mixture cook for another 2 to 3 minutes until the sauce slightly thickens and becomes glossy. Taste and adjust seasoning with salt and pepper if needed.
  6. To serve, add warm rice to bowls and top with the ground beef mixture. Spoon extra sauce over the rice and garnish with sliced green onions. Serve immediately.

Notes

  • For extra flavor, add a splash of sesame oil at the end
  • You can double the sauce if you like more coating on the rice
  • Store leftovers in an airtight container for up to 3 days
