Easy Instant Pot Corned Beef and Cabbage

A simple and hearty Instant Pot corned beef recipe made with tender brisket, flavorful broth, and perfectly cooked vegetables. This one-pot meal is easy, filling, and full of rich taste.

Ingredients
  

  • 1.2 to 1.5 kg corned beef brisket
  • 4 cups water or beef broth
  • 1 medium onion halved
  • 4 garlic cloves crushed
  • 2 bay leaves
  • 1 tbsp pickling spice or spice packet
  • 3 large carrots cut into chunks
  • 4 medium potatoes halved
  • 1 small cabbage cut into wedges

Method
 

  1. Rinse corned beef under cold water and pat dry
  2. Place brisket in Instant Pot
  3. Add water or broth, onion, garlic, bay leaves, and spices
  4. Close lid and cook on high pressure for 90 minutes
  5. Let pressure release naturally for 15 to 20 minutes
  6. Remove meat and set aside to rest
  7. Add carrots and potatoes into the pot
  8. Place cabbage on top
  9. Cook on high pressure for 5 minutes
  10. Quick release pressure
  11. Slice corned beef against the grain
  12. Serve with vegetables and broth

Notes

  • Rinse meat to reduce saltiness
  • Use broth for deeper flavor
  • Cut vegetables large so they stay firm
  • Always slice against the grain
  • Add cabbage last to avoid overcooking
