Add gnocchi and vegetables to the sheet pan in a single layer.
Drizzle olive oil over everything and toss gently to coat.
Sprinkle garlic powder, Italian seasoning, salt, and pepper evenly.
Spread ingredients out again to avoid overcrowding.
Bake for 20 to 25 minutes, removing halfway to stir.
Sprinkle parmesan cheese evenly over the top.
Return to oven and bake for 5 more minutes until golden and crispy.
Remove from oven, let cool slightly, and serve warm.
