Chicken Pot Pie Orzo

Ingredients
  

  • 1 lb chicken breast diced
  • 1 cup orzo pasta
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 cup carrots diced
  • 1 cup peas
  • 3 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese
  • Salt
  • pepper
  • thyme
  • garlic powder

Method
 

  1. Cook chicken in butter and oil until golden and set aside.
  2. Sauté onion, carrots, and garlic until soft.
  3. Add seasonings and stir in orzo.
  4. Pour in broth and simmer until orzo is tender.
  5. Add chicken and peas and mix well.
  6. Stir in milk and cream until thick and creamy.
  7. Add parmesan cheese and serve warm.

Notes

  • Cut the chicken into small, even pieces so it cooks quickly and stays tender.
  • Stir the orzo often while simmering to keep it from sticking to the bottom of the pan.
  • If the mixture becomes too thick, add a splash of warm chicken broth or milk to loosen the sauce.
  • The sauce will continue to thicken as it cools, so let the dish rest for about 5 minutes before serving.
  • Freshly grated parmesan melts more smoothly than pre-shredded cheese.
  • Taste before serving and adjust the salt and pepper if needed.
