Ingredients
Method
- Cook chicken in butter and oil until golden and set aside.
- Sauté onion, carrots, and garlic until soft.
- Add seasonings and stir in orzo.
- Pour in broth and simmer until orzo is tender.
- Add chicken and peas and mix well.
- Stir in milk and cream until thick and creamy.
- Add parmesan cheese and serve warm.
Notes
- Cut the chicken into small, even pieces so it cooks quickly and stays tender.
- Stir the orzo often while simmering to keep it from sticking to the bottom of the pan.
- If the mixture becomes too thick, add a splash of warm chicken broth or milk to loosen the sauce.
- The sauce will continue to thicken as it cools, so let the dish rest for about 5 minutes before serving.
- Freshly grated parmesan melts more smoothly than pre-shredded cheese.
- Taste before serving and adjust the salt and pepper if needed.
